Beef Brisket

A fun as it is to tend to a brisket in the barbecue over the course of an afternoon, you don’t always have the time and sometimes the weather will not cooperate at all. In those instances, the oven barbecue brisket may be just the answer you are looking for. A little preparation the day before is all the effort needed to make a delicious brisket.

Serves 4 to 6 persons
Ingredients:
  • 4 to 5 pound beef brisket
  • 1/2 cup packed brown sugar

  • 1 tablespoon chili powder
  • 1 tablespoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/4 teaspoon nutmeg
  • 1 tablespoon yellow mustard
  • 2 tablespoons Worcestershire Sauce
  1. Combine seasoning in bowl and mix well to make marinade. Rub into both sides of the brisket.
  2. Wrap brisket, fat side up, tightly in foil with the foil seam-side up. Be sure to add all the marinade before sealing the foil. Place in refrigerator overnight.
  3. Place rack inside roasting pan. Perforate foil with fork in 3 or 4 sites on bottom side of foil. Place on rack with drain holes on the bottom.
  4. Bake in preheated 300°F. oven for 4 hours.
  5. Remove from foil and allow to set 15 minutes before carving. Makes a tasty main meal entree as well as satisfying fare for BBQ beef sandwiches.
