Barley With Meat


A satisfying and easy to make main dish that is frequently found on the dinner table. You will savor the rustic goodness of barley combined with the taste of your favorite meat.

Preparation: 2 hour2 30 minutes Heirloom Recipe
Serves 4 to 6 persons Meds Mama Sarkisian/Pattie Knapp
  • 1 pound ground or bone in pieces of - beef, lamb or veal
  • 1 cup barley
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 3 tablespoons olive oil
  • 4 to 6 cups of chicken stock
  1. Brown barley in the olive oil. Remove from fryig pan and set aside.
  2. Add garlic and onion to frying pan and sauté until tender. Remove and set aside.
  3. Brown and break up meat. Cook until no longer pink. Drain excess fat.
  4. Combine meat, barley, onions and garlic in an oven-proof coverable casserole dish. Stir in 3 or 4 cups of the chicken stock.
  5. Bake covered in a preheated 350°F oven for 1 hour. Remove from oven. Add remaining chicken stock and cover.
  6. Return to oven and cook for an additional 1 hour or until the desired consistenc
