Caramelized Potatoes

A traditional holiday fare, caramelized potatoes are a treat that is welcome any tine of the year. They go well with beef, chicken and pork dishes.

Preparation: 30 minutes Life Experience Recipe
Serves 2 to 4 persons
Ingredients:
  • 1 pound small red or fingerling potatoes
  • 1/3 cup butter
  • 1/3 cup sugar
  • 2 teaspoons chopped parsley (optional)
Procedure
  1. Peel potatoes. Simmer the potatoes in salted water until just soft, almost done. Drain and allow to cool slightly.
  2. In a heavy skillet over medium-low heat, melt the sugar, stirring frequently. until the sugar browns, about 5 minutes.

  3. Add the butter, stirring until melted and well mixed with the sugar.
  4. Add the cooked potatoes, folding into the butter and sugar mixture until well coated. Cook until potatoes lightly brown, turning to brown all sides. Use slotted spoon to remove potatoes to serving dish. Drizzle with a bit of the caramel sauce. Sprinkle with chopped parsley, if desired.
