Cake Mix Cookies

The recipe is called versitile because, as you can see, the variations are almost endless and they are so quick and easy.

I don't know how many cookie this recipe makes. They seem to dissappear from the wire rack about as quick as they are made making a count nearly impossible.

Preparation: 30 minutes Life Experience Recipe
Makes about 2 dozen Janis Andersen
Ingredients:
  • 1 box 2-layer cake mix
  • 2 eggs
  • 1/4 cup vegetable oil
  • Ingredients for variations: substitute and add as below:
Procedure:
  1. Mix all ingredients in a large bowl. Spoon drop onto cookie sheet prepared with cooking spray.
  2. Bake in a preheated oven at 350°F. for 10 to 12 minutes. Remove from cookie sheet and cool on a wire rack.
Variations:
  1. White Cake Mix - 1/2 teaspoon cinnamon. They taste like snickerdoodles.
  2. Spice Cake Mix - Add raisins.
  3. Yellow Cake Mix - 1 cup chocolate chips, nuts or raisins.
  4. Cherry Chip Cake Mix - 1 cup chocolate chips
  5. Chocolate Cake Mix - 1 cup chocolate chips, nuts or raisins.
