Zucchini Meatloaf by Roylene Monson
Preparation: 1 hour 30 minutes
Life Experience Recipe
Serves 4 to 6 persons
2 pounds ground beef
1 cup Italian seasoned bread crumbs
1 tablespoon parsley
2 teaspoons instant beef bouillon
1 cup milk
2 cups coarsely grated zucchini
1/2 cup grated Parmesan cheese
1 small onion, finely chopped
1/4 teaspoon salt
1 egg beaten
Combine all ingredients and mix well.
Pack into loaf pan.
Bake in pre-heated oven at 350°F. for 1 1/4 hours.
Garnish with fresh zucchini slices. Sprinkle with paprika during the last 10 minutes of baking
