Braised Pork ala Leko

This is an adaptation of a recipe I received from friend Tom Galloway. He got the recipe from his neighbor, Leko Kosuda Reed, for her Pork ala Leko. He sampled the dish one day not too long ago and thankfully shared it with us. It adapts well to the AirCore Self-Cooking method. In this recipe we have used a pork loin with good results. Daikon is sometimes hard to find in remote areas when you are camping. Try celery, as we did here, or perhaps a small turnip.

Preparation: 3 hours Life Experience Recipe
Serves 6 persons
Ingredients:
  • 1 ½ pound pork roast
  • 3 tablespoons soy sauce
  • 2 8-ounce cans chicken broth
  • 1 clove garlic, chopped
  • 1 pinch of ground ginger
  • 1 daikon, chopped
  • 6 medium potatoes, cubed
  • 6 medium carrots, cut bite-size
  • 2 yellow onions, sliced
Procedure
  1. Put pork roast in Dutch oven with glass cover, Add daikon and garlic.
  2. Add chicken broth and just enough water to cover the roast. Over medium heat, bring to a boil. Add ginger and soy sauce.
  3. Reduce heat to maintain simmer and cook 15 minutes.
  4. Add your prepared vegetables. Increase heat and return to a simmer. Reduce heat to maintain simmer and cook an additional 15 minutes.
  5. Add outer lid and continue cooking until thermometer needle is in the red, about 20 minutes.
  6. Remove from heat and self cook until thermometer is in the bottom of the yellow, about 3 hours. Remove meat from broth and allow to sit for 15 minutes before carving.

While the meat, potatoes and carrots make a tasty plate of food, the broth and vegetables, with perhsps a slice of pork, makes a wonderful. satisfying soup.
