Bean Dip


I wrote Jeri and asked for the recipe as I didn't think that I remembered it all that well (After she wrote back, I knew that I didn't remember it at all.) Late shifts at hospitals are known for their pot-luck meals. She says she got this one from some long forgtten soul in the X-ray Department at Glendale Memorial Hospital. In addition to the recipe, Jeri writes... As you can tell I don't have exact sizes of containers. I use bigger cans of the stuff I like (or have on hand) and smaller amounts of the flavors I don't like so well. Enjoy. I've taken it to work here and ended up feeding the whole night shift. Thank goodness it makes enough for an army.

Preparation Time : 15 minutes

Serves 6 to 8 persons

Life Experience Recipe

Ingredients:
  • It takes two cans (the big ones) of refried beans.
  • 1 pound (or more) of cheese--any type you like
  • 1 can chopped green chiles
 
  • 1 jar salsa
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • 1 or 2 chopped tomatoes (optional)
Procedures:
  1. Reserve half the onions, cilantro and tomatoes and 1/4 cup of cheese.
  2. Mix reaining ingredients in crockpot and cook on high until cheese melts, stirring to check. Switch to low and sprinkle reserved ingredients on top.
  3. Serve with oven-warmed bowels-full of your favorite chips.
