Steak

ala Christina

You may have to hunt a bit to find the Tastefully Simple Spinach and Herb Mix but Christina says it is worth it.

The original recipe from my daughter listed McCormick Seasoned Pepper Blend as one of the ingredients. Apparently this product has been discontinue by McCormick and not available in stores. The last supplies are being sold in six-packs over the Internet. Lawry’s Seasoned Pepper Blend, also made by McCormick, is a near identical product and can be found in most large food markets.

Dry Rub:
  • Pinch of dried sage
  • 1 part seasoned salt
  • 1 part ground black pepper
  • 3 parts Tastefully Simple Spinach and Herb Mix (spinach flakes, onion, minced green onions, dill, garlic...)
Marinade:
  • 3 parts your favorite BBQ sauce
  • 1 teaspoon soy sauce or to taste
  • Minced garlic - lots or to taste
  • 2 parts ketchup
  • 3 teaspoons Worcestershire sauce or to taste
  • A few drops each of lemon juice and hot sauce
Procedure
  1. Mix all dry rub ingredients (except minced garlic) together. Mix marinade ingredients together and set aside.
  2. Place steaks between sheets of plastic wrap and pound lightly with tenderizer mallet. With a paring knife, make numerous slits all over the steak.
  3. Apply dry rub liberally to top, bottom and sides of the steaks. Apply minced garlic to all sides of the steak, pressing the garlic into the slits.
  4. Place steaks in a zip lock bag and add the marinade, turning bag to evenly coat steaks on all side. Close bag and marinade in the refrigerator for 2 to 3 hours, turning once or twice.
  5. In frying pan saute a mixture of sliced onions and mushroom in butter until onions are tender. Set aside.
  6. Grill or broil steaks as desired. Cover with sauted onions and mushrooms.
