Sweet Potato Pie

With Streusel Topping

The holidays seem to bring out the best in people. One of our neighbors was kind enough to drop off this pie for us during the Christmas season. It was an act of kindness and truly good taste.

Pie Ingredients:
  • 1 1/4 cups sugar
  • 1/2 teaspoon nutmeg
  • 1 12-oz can evaporated milk
  • 1 1/2 cups mashed sweet potatoes
  • 1/2 teaspoon ground cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 single-crust, unbaked pie shell
Streusel Ingredients:
  • 1/3 cup butter or maragrine
  • 1/2 cup brown sugar
  • 1/2 cup coarsely chopped pecans or walnuts
  • 1/3 cup all-purpose flour
  • 1/2 cup grated coconut
Procedure
  1. Place drained sweet potatoes in mixer bowl. Mix until potatoes are a smooth mash. Add condensed milk, egg and spices and mix until well combined. Pour into prepared pie shell and set aside.
  2. In a small bowl, combine brown sugar, flour, cinnamon and butter. Blend with a fork to makle a crumbly mixture. Add pecans and mix just until combined. Sprinkle evenly over the top of the prepared pie.
  3. Bake in a preheated 375° oven for 50 to 65 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack to room temperature before cutting and serving.
